Instructions

  • Set aside the finely chopped dark chocolate in a heatproof bowl.
  • Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  • Remove from the heat and sprinkle with the chopped chocolate.
  • Stir the mixture until the chocolate is completely melted and smooth.
  • Stir in the marzipan and almond extract until well combined.
  • Refrigerate for 30 minutes, or until the mixture is firm enough to roll into balls.
  • Scoop out small balls of the mixture with a small cookie scoop or spoon and roll between your palms to form even balls.
  • Roll the truffles in the cocoa powder until evenly coated.
  • Refrigerate for 30 minutes more before serving.
