Aerated White Chocolate Recipe

This decadent treat is made with light and fluffy aerated white chocolate. Because of the addition of sunflower lecithin powder, the chocolate is whipped into a smooth, airy texture that is ideal for topping desserts or enjoying on its own.

Instructions

  • In a heatproof bowl, melt the white chocolate over a pan of simmering water, stirring occasionally, until smooth.
  • Remove from the heat and stir in the sunflower lecithin powder until thoroughly combined.
  • Whip the cream until it forms soft peaks.
  • Fold the whipped cream gently into the melted chocolate mixture until completely combined.
  • Fill a whipped cream dispenser halfway with the mixture.
  • Charge the dispenser with two cream chargers, shaking it between each charge.
  • Allow the chocolate to set in the refrigerator for at least 30 minutes.
  • Chill before serving.
